This mixed-fermentation saison is a collaboration with Maidenii and Carwyn Cellars.

Aged in Maidenii"s sweet vermouth Barrel, balancing gentle botanical sweetness with herbal complexity, bright acidity, and a classic saison funk. Whole cone ryefield hops layer in citrus lift and a firm, pleasant bitterness.

Maidenii was severely affected by the bushfires that swept through Harcourt in January 2026. While they lost many barrels, equipments and botanicals, this barrel was luckily safe in our brewery. Learn more about Maidenii and vermouth on Maidenii's website.
