Imperial Law of the Tongue is an imperial smokey oyster stout brewed with Wapengo Rocks organic oysters to celebrate 10 years of Sailors Grave Brewing. Rich, robust and deeply layered, this limited release doubles down on our favourite oyster stout with bold smoked malt character and coastal salinity.
The beer tells the story of Old Tom, the famous orca who spent almost four decades working alongside Sapphire Coast whalers in the early 1900s. In return for helping drive baleen whales into Twofold Bay, Old Tom and his pod feasted on the lips and tongues before leaving the rest of the catch for the whalers. This remarkable partnership became known as the "Law of the Tongue".

Lore of the Tongue - bottle editions
The bottle releases of Imperial Law of the Tongue take the beer a little further.
These beers are bottle conditioned, with a small addition of sugar before bottling to kick off a second fermentation in the bottle. This creates a little more alcohol, natural carbonation and further layers of flavour as the beer matures.
Red Label
The original bottle-conditioned version. A little stronger and naturally carbonated, with the rich, smoky character of Imperial Law of the Tongue given extra time to develop in the bottle.
Green Label
Bottle conditioned with the addition of an aniseed myrtle tincture, made by soaking aniseed myrtle in vodka before blending it into the beer. The native botanical brings an aromatic, aniseed-like character that cuts through the richness of the stout and adds another layer to the beer.
Both bottles are a little different from the canned version, and from each other. Part of the fun is seeing where the Law takes you.
